{"id":1900,"date":"2012-06-06T21:42:10","date_gmt":"2012-06-07T03:42:10","guid":{"rendered":"http:\/\/www.kerstinschocolates.com\/blog\/?p=1900"},"modified":"2012-07-16T14:55:08","modified_gmt":"2012-07-16T20:55:08","slug":"visiting-the-casfa-cacao-growers-in-tapachula-chiapas","status":"publish","type":"post","link":"http:\/\/www.kerstinschocolates.com\/blog\/?p=1900","title":{"rendered":"Visiting the CASFA cacao growers in Tapachula, Chiapas"},"content":{"rendered":"<div id=\"_mcePaste\"><a href=\"http:\/\/www.kerstinschocolates.com\/blog\/wp-content\/uploads\/2012\/06\/A-pool-of-sunlight-in-the-cacao-grove..jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-thumbnail wp-image-1903\" title=\"A pool of sunlight in the cacao grove.\" src=\"http:\/\/www.kerstinschocolates.com\/blog\/wp-content\/uploads\/2012\/06\/A-pool-of-sunlight-in-the-cacao-grove.-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><\/a>The day after our tour of the Tapachula chocolate museum, we met Don Rubiel, a representative from CASFA, the biggest cooperative in the area. \u00a0 \u00a0Don Rubiel&#8217;s job is to make the rounds at the plantations to insure that the farmers are properly fermenting the beans or pruning the trees regularly. \u00a0 Don Rubiel took us to meet a cacao farmer named David, who showed us around his plantation. \u00a0David owns 10 hectares of land, half of which is cacao and the other half, bananas. \u00a0<a href=\"http:\/\/www.kerstinschocolates.com\/blog\/wp-content\/uploads\/2012\/06\/A-very-productive-tree..jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-thumbnail wp-image-1904\" title=\"A very productive tree.\" src=\"http:\/\/www.kerstinschocolates.com\/blog\/wp-content\/uploads\/2012\/06\/A-very-productive-tree.-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><\/a> It was interesting to see the difference between the two. \u00a0The banana plantation was totally uniform, growing exclusively bananas and \u00a0in contrast, the cacao plantation was more diverse, mixing cacao trees with fruit trees and flowers. \u00a0The trees provided plenty of shade and food to support the local wildlife. \u00a0David told us that parrots came to feed on the fruit in the afternoons. \u00a0There was even an eagle&#8217;s nest nearby. \u00a0 Here was proof that cacao \u00a0plantations help support biodiversity.<\/div>\n<div id=\"_mcePaste\"><a href=\"http:\/\/www.kerstinschocolates.com\/blog\/wp-content\/uploads\/2012\/06\/A-white-bean-in-the-same-pod-as-a-purple-bean..jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-thumbnail wp-image-1905\" title=\"A white bean in the same pod as a purple bean.\" src=\"http:\/\/www.kerstinschocolates.com\/blog\/wp-content\/uploads\/2012\/06\/A-white-bean-in-the-same-pod-as-a-purple-bean.-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><\/a>After we got our fill (quite literally) of the plantation, we took a long hot drive to the coast to visit another plantation. \u00a0This one looked quite similar to David&#8217;s, except it had way more mosquitos! \u00a0I was really excited to see for the first time, a theobroma bicolor tree. \u00a0 <a href=\"http:\/\/www.kerstinschocolates.com\/blog\/wp-content\/uploads\/2012\/06\/Kerstin-holding-a-pod-of-Theobroma-Bicolor..jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-thumbnail wp-image-1906\" title=\"Kerstin holding a pod of Theobroma Bicolor.\" src=\"http:\/\/www.kerstinschocolates.com\/blog\/wp-content\/uploads\/2012\/06\/Kerstin-holding-a-pod-of-Theobroma-Bicolor.-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><\/a>Bicolor is a relative of theobrama cacao but the seed does not provide anything nearly as tasty as its cousin&#8217;s. \u00a0Locals do use the fruit to prepare a drink called &#8220;pozol&#8221; which combines cacao and bicolor with corn. \u00a0It&#8217;s quite delicious if you ever get a chance to try it. \u00a0I recently learned that bicolor might benefit cacao by helping it resist disease. \u00a0The ancient Mayans may have grown them next to each other for that purpose. \u00a0Amazing!<\/div>\n<div id=\"_mcePaste\"><a href=\"http:\/\/www.kerstinschocolates.com\/blog\/wp-content\/uploads\/2012\/06\/An-unripe-criollo-pod..jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-thumbnail wp-image-1907\" title=\"An unripe criollo pod.\" src=\"http:\/\/www.kerstinschocolates.com\/blog\/wp-content\/uploads\/2012\/06\/An-unripe-criollo-pod.-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><\/a>Although the kids were quite fed up by now with our cocoa explorations, we took another long and bumpy drive to the town of San Jose, where we visited a chocolate factory. \u00a0One of the owners, Bernadina Marciel, showed us around. \u00a0There was no chocolate \u00a0being made that day because the harvest season was still a couple of months away yet it was interesting to see the equipment nevertheless. \u00a0 <a href=\"http:\/\/www.kerstinschocolates.com\/blog\/wp-content\/uploads\/2012\/06\/The-grinder..jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignright size-thumbnail wp-image-1908\" title=\"The grinder.\" src=\"http:\/\/www.kerstinschocolates.com\/blog\/wp-content\/uploads\/2012\/06\/The-grinder.-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><\/a>Bernadina walked us past the roaster and the winnower, \u00a0and straight to the melanger. \u00a0We soon found out that the melanger was her domain and it is where she grinds the rough cacao paste into smoother liquor. \u00a0Next she took us \u00a0to the tempering room, where they mold the chocolate once it is out of the melanger. \u00a0Mexican chococlate is never conched, which is why it tastes so gritty. \u00a0I suppose this step isn&#8217;t necessary if you drink the chocolate like the Mexicans do. <a href=\"http:\/\/www.kerstinschocolates.com\/blog\/wp-content\/uploads\/2012\/06\/The-winnower..jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignleft size-thumbnail wp-image-1909\" title=\"The winnower.\" src=\"http:\/\/www.kerstinschocolates.com\/blog\/wp-content\/uploads\/2012\/06\/The-winnower.-150x150.jpg\" alt=\"\" width=\"150\" height=\"150\" \/><\/a> Apparently, it also retains more of its beneficial antioxidants if processed this way.<\/div>\n<div id=\"_mcePaste\">After taking a peak at the roaster and winnower which were \u00a0fairly old but looked to be in good condition, we went outside to say goodbye. \u00a0 I told Bernadina that I was inspired to make chocolate after seeing her operation. I think by seeing a female chocolate maker, I felt less intimidated by the \u00a0prospect of making chocolate from the bean.<a
